The only reason for a high end video card in a server would be if you are going to use the card's GPU for offloading tasks from the main CPU's. I don't recommend adding a video card to the server as that's a waste of money.

Otherwise I agree with the above, generally you manage a server remotely (Server rooms are noisy and freezing, so you wouldn't want to stay in there longer than absolutely necessary), and if you remote desktop into a server the server's video card's capabilities won't matter. So usually you attach them to a KVM box to which one display, keyboard and mouse is connected.
